Our roasted beet salad with vegan hollandaise sauce is delicious and a great dairy & gluten free alternative. It’s packed with quinoa, high in protein and is full of nutrients and antioxidants. The hollandaise sauce itself has all the added health benefits that come from the cashew milk, cider vinegar and turmeric with their anti-inflammatory & antioxidant properties to name a few. It’s an easy recipe to follow and this colourful plate of food is a welcomed relief from the grey, cold and wet months. Make sure to prepare this the night before and keep the hollandaise sauce in a separate container until you’re ready to enjoy your lunch.
2. Blood Orange, Beetroot and Quinoa Salad
The season has arrived for vibrant and juicy blood oranges, so why not pair them with some health busting beets and quinoa in another delicious winter salad recipe. Quinoa has been a food trend for a few years now, partnering so well with root veg and citrus flavours, so this really is the perfect combo for a satisfying and filling lunch. A little prep required in order to cook the beetroots but oh so simple and remember to keep the salad undressed until you’re ready to tuck in.

Move over Kale, Cauliflower is the veggie of choice. This beauty is incredibly versatile and a great alternative to rice, pasta or potatoes for those carb-free meals. If that’s not the case then it’s equally as quick to make before heading in or savouring for the weekend. This turmeric and blueberry porridge packs a health punch and it’s delicious, dare we say. If you’re not a fan of blueberry’s then swap out for another berry or fruit of your choice. It’s a huge favourite amongst the team at Social Pantry!
